The Making of Veg Chowmien in India

The vegetarian chowmien is basically stir fried noodles which has loads of veggies. The smooth velvety noodles and crunch from the veggies give it a wonderful taste to relish on.

How to make veg chowmein
The total preparation time to cook this recipe is around 30 minutes while the cooking time is 20 minutes. 

Ingredients required for cooking noodles are 150 to 200 gms or 5.5 to 7 lb noodles (plain or whole wheat noodles or flat noodles), five cups of water, 1/4 tsp of salt, ½ tsp of sesame oil or any other oil, ¾ to 1 cup sliced button mushrooms, ¾ cup grated or shredded carrots, ¾ cup cabbage, ¼ to ⅓ cup finely chopped french beans, ⅓ cup finely chopped onions, ¼ cup thinly sliced capsicum/ bell pepper, ¼ cup sprouts (optional), ⅓ to ½ cup tofu cubes, 1 tsp chopped ginger, 1 tsp of chopped garlic, 1 tsp finely chopped celery, 3 tsp soy sauce, 1 tbsp tomato ketchup, ½ tsp black pepper or white pepper powder, 2 tsp corn starch + 2 tbsp water, ½ tsp rice vinegar or regular vinegar and 2.5 to 3 tbsp sesame oil. 

Cook noodles in water and drain it once they turn soft. Rinse them in running water. Add ½ tsp oil to the noodles and toss them so that oil gets coated evenly on the noodles. This method removes stickiness from the noodles. Now cover and keep the noodles on side.

Now, you can chop & grate the veggies by the time noodles are being cooked.

Besides, prepare corn starch paste with 2 tsp corn starch and add 2 tbsp water. Keep it aside.Heat oil in a pan.  First saute the green chilies, ginger and garlic on medium heat. Add chopped onions or spring onions and then saute for a minute.

Add sliced mushrooms and chopped french beans to the mixture. Stir and saute on a medium flame till the mushroom edges get lightly browned.Add grated carrots, shredded cabbage and sliced bell pepper/capsicum.

Stir, increase the flame to a high and fry everything on a high flame for 2 to 3 minutes. Add soy sauce or tomato sauce or red chili sauce or green chili sauce. Pour black pepper. Stir everything and then add the corn starch paste. Stir it and then add stir fried vegetables. Now,  saute for a minute and then add the cooked noodles on high flame. Mix and toss the noodles with the stir fried veggies. At last, add vinegar to give a final mix and ready to eat Veg Chowmine

Imagine sitting idly savouring the sweet smell of crisp vadas along with the sound of spluttering mustard seeds! It’s very true true that the South Indian food has been appealing the senses. Its aromatic and delicious properties have been winning hearts all over the world.

And are you aware of the important ingredients used in the South Indian food recipe? Pickles, pappadams, and yogurt are the main constituents of South Indian thalis. 

Coconut is the most important ingredient.  Coconut oil is used mainly in cooking. There are tonnes of other spices’ such as cinnamon, cumin, nutmeg, chilli, curry leaves, cardamom, mustard etc which add fresh aroma to sambhar.

Similarly, Kerala's cuisine is garnished with pepper, cumin,  cinnamon, cardamom,  turmeric and coconut! The other ingredients used are tamarind, unripe mango, lime juice, vinegar and curd.

Now, let’s discuss a unique South Indian dish, that is, the 4 Floor Dosa. It is made with a fermented batter of soaked urad. This is combined with right proportions of four kind of readymade flours.

The batter is fermented which makes it crispy and fluffy. 

Recipe: 

The soaking time is 2 hours  and preparation time is 10 mins. An overnight time is required for fermentation. The cooking time is 30 minutes.

Ingredients

We require a1/2 cup urad dal,1 tsp fenugreek (methi) seeds, a half cup of bajra flour, a half cup of jowar flour, a half cup of ragi flour, a half cup whole wheat flour (gehun ka atta), a little salt to taste and 3 tsp oil for cooking.

Mix urad dal and fenugreek seeds in a bowl. Soak it in water for 2 hours. Drain and then blend in a mixer till it turns smooth by adding three-fourth cup of water.

Transfer this mixture into another bowl. 

Now add bajra flour, nachni flour, jowar atta, whole wheat flour, salt and 1¾ cups of water and then mix it well. Now, cover it and keep it at safe place to ferment overnight.

Next day, mix it. Now take non-stick tava and put it on flame.

Pour a little batter on it and spread it in a circular motion. Put a little oil on edges and start cooking it on a medium flame till dosa turns brown. Now it can be folded to give it a shape of semi-circle. This can be served immediately with sambhar.

How Does the Evaporative Air Cooler Work?
